The Sassies had the opportunity to review Salt Lake’s newest premier restaurant, Pallet. The restaurant has been open for a little less than a month and doesn’t have a completed website. All advertising has been word of mouth, and yet it’s been incredibly busy and well received.
Pallet is located in what used to be a creamery built in the early 1900’s. The restaurant is located in their old loading dock, hence the name Pallet. I can always appreciate a restaurant with a play on words in the title. The owners, Rocky and Drew, have kept much of the early 20th century rustic charm with the red brick walls, mason jars for candle holders, beautiful reclaimed dark woods, and Edison bulb lighting. Yet, it has a very modern, urban, loft feel to it.
The two owners have really made this restaurant their labor of love. Rocky’s wife, Courtney, has contributed to the amazing art work on the walls, including a very cool, yet slightly intimidating, portrait of Porter Rockwell.
The menu is chef inspired, and with the exception of a few items with the owners’ input, he creates the entire menu of contemporary American food. Pallet boasts only the best and freshest ingredients, whether it is locally grown produce, or salmon flown in from Scotland.
Pallet is currently open for lunch and dinner, but plans for a brunch menu are in the works. Find out on Wednesday if the Sassies thought the new Pallet restaurant lives up to all the hype.
